Vintage 2000

Weather conditions / The 2000 vintage was proclaimed from the start as one of the best vintages of modern times. In the spring of 2003, I had many opportunities to find out if we really had a true dream vintage on our hands.

During the 2000 harvest, while doing a “personal inspection” in the vineyards, I noticed that something extraordinary was on the way. The grapes looked extremely healthy.

The 2000 Pavie was, as Josh had said a couple weeks prior when one was opened at one of our auctions, ‘not bad.’ The nose was dusty, spicy and cedary with a touch of vanilla. The palate was rich, big and long with impressive length. Quite meaty, there were also lots of coffee flavors here, but like I said, it wasn’t bad. I could actually polish it and its cinnamon-y French toast flavors off. As a side note, the ’05 out of barrel, however, I found gross, so perhaps it, too, needs to scratch a seven-year itch

Showing some maturity, the 2000 Pavie is about as sexy and opulent as Bordeaux gets. Blackcurrants, blackberries, toasted spice, truffle, and awesome minerality all emerge from this behemoth of a wine. From a magical terroir of steep limestone slopes and made from 60% Merlot, 30% Cabernet Franc and the rest Cabernet Sauvignon, it offers incredible depth and richness, yet stays elegant, light on its feet, and graceful. It’s an extraordinary, singular wine.

On the palate the wine is velvety and soft with lots of new oak and cherry fruit. Modern in style this is a fruit driven, stylish wine with lots of polish and sweet tannins.
